Apple Fritter Rings with Vegan Caramel

This recipe takes our love for apples to a whole new level. Don’t know about you, but at WearActive in Croatia and Austria, we are suckers for anything with an apple in the recipe. When you also add a hint of cinnamon then wow, we are one big happy family.

All apples have nutritional benefits and should be eaten as part of a balanced and healthy diet, with evidence to suggest that Granny Smith apples may be at the top of the nutritional apple list. We would be stretching the truth however to pretend that these Apple Fritter Rings should be eaten for their nutritional value! If you are looking for your healthy apple fix, then eat one as nature intended. If you are having a bad day, or you have had a really active day in the mountains or just because, then this apple recipe will instantly cheer you up. As we were not aiming for a healthy recipe, we have also included a Vegan Caramel Sauce!

Just a word of warning when it comes to caramel making though. Regardless of whether you are making a vegan or a non-vegan version, making caramel requires a bit of skill, so please don’t be discouraged if you don’t get it perfect on your first go. Constant whisking is the key.

Apple Fritter Rings with Vegan Caramel

Ingredients

1 apple 

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon white sugar

1/3 cup plant-based milk 

1/3 cup sparkling water

frying oil

Icing sugar (to sprinkle on top)


Vegan Caramel

Ingredients

8 x tbsp Plant based butter

200g Brown sugar 

4 x tbsp plant based milk

Pinch of sea salt

1 x tsp Vanilla essence

½ tsp cinnamon powder


Instructions

Peel the apple and remove the core. Cut the apple into about 12 rings. For the batter, combine the flour, baking powder, and sugar. Add the plant-based milk and sparkling water and whisk together. If you dip an apple slice into the batter, the batter should stick to the apple but it shouldn't be too thick. Add more water if it's a bit too thick, adding more flour if it's too runny. 

Heat the frying oil in a pan (just enough so that the apple rings can swim in the oil). Fry each apple ring dipped in the batter for about 3-4 minutes - until golden and crispy. If they brown too quickly, then your oil is too hot, reduce the heat a bit.

Transfer them to a paper towel to remove excess oil.

For the Vegan Caramel, beat the ingredients slowly in a pan and whisk to create a smooth caramel. 

Sprinkle the Vegan Apple Fritter Rings with powdered sugar and serve with the caramel.
